Well-heeled 'Forever Tango' Portends Danger, and Pleasure

In “Forever Tango,” returning from a world tour to the Walter Kerr Theatre through 15 Sept., it would seem to be the very definition of the word.

“Forever Tango” is the brainchild of Luis Bravo. He has taken it around the world and brought it to Broadway on two previous tours, in 1997 and 2004. LB is not just the creator/director/producer of “Forever Tango,” but also a cellist in the on-stage band led by Victor Lavellen. (See video above).

Tango is not fluid like the waltz or lighthearted like the meringue. Lovers don’t coo as they dance, or even flirt. Tango is formalized and deadly serious. It is a battle of the sexes with sharp, well-defined steps; its dancers generally show a businesslike mien. There is no smiling in tango!

That is not to say there is no humor in “Forever Tango.” Case in point is Natalia Turelli and Ariel Manzanares in their very funny and expertly executed bits, "La Tablada" and "Felicia."

It is a credit to the imagination of the choreographers that, in the highly ritualized framework of the tango, each dance is a surprise; its movements and emotions unexpected and revelatory. For the most part each pair of dancers has choreographed its routines. The exceptions are the numbers performed by guests Maxsim Chmerkovskiy and Karina Smirnoff from ABC’s "Dancing with the Stars." Both of their showcase pieces, "Comme I’ll Faut" and "Romance Entre El Dolor y Mi Alma," are credited to Juan Paulo Horvath and Victoria Galoto.

These two featured performers, JPH and VG, open and close the show with a dance in tribute to the bandoneon, the instrument whose mournful sound is tango’s signature. JPH’s angular aggression is matched by his partner's fiercely spirited defense.

Adding to the sense of danger inherent in the dance, the shoe of choice for the ladies of “Forever Tango” is a stiletto sandal.  The gorgeous costumes are sumptuously designed by Argemira Affonso and splendidly worn by the large cast.

MC (known as Max to fans of "DWTS") is greeted with hoots at his every appearance. He laps up the attention by vamping almost to the point of irony. If he weren’t so affable and likable, it would be too much. His and KS’ presence in “Forever Tango” do add a welcome touch of celebrity, though.

Multiple Grammy winner Gilberto Santa Rosa provides interludes of romantic songs - sometimes accompanying the dancing, sometimes solo. His duties will be taken up by Luis Enrique, who joins the cast from today through 18 Aug. From 20 Aug. through 1 Sept., LE passes the torch to Luis Fonsi.

Mercedes-Benz Fashion Week Swim Photo Diary

ISN'T it wonderful that the biggest swimwear shows in the world happen during the summer? At least summertime in much of the world.

The Big 4 fall-winter and spring-summer shows always happen out of season. It's February, the teeth are chattering and one is watching flimsy frocks saunter and sashay down the runway. In September, it's still hot. The last thing a body wants is a double-faced wool parka.

But come July when it's hot! hot!! hot!!, the scene in Miami is sweltering outside. And inside, too, where the swimwear that can adorn bodies starting in about six months is making its sultry debut on runways at the Raleigh Hotel and a few other South Beach venues.

Mercedes-Benz Fashion Week Swim wrapped on Monday. As one can imagine, lots of eye candy. Enjoy some designs from the five days of parties, presentations and shows.

Bacardi Guy Rafael Nadal Mixes It Up at Bar and in DJ Booth



21 July 2013/MALLORCA, Spain – AS always, Rafael Nadal was a gracious (and game) host at "The Champions' Party."

On his home island, he welcomed friends and "Mix with Rafa" promotion winners to the posh villa, Castell de Manresa. It was a night of music, mixing, mixology and more. (See video at top).

As the Bacardi Limited Global Social Responsibility Ambassador, RN encourages those who consume Bicardi (and any other alcoholic beverages) to pace themselves, for instance, by taking a "Time Out" between drinks. During the respite, a body can drink water or enjoy the signature "Rafa's Champions' Mix." The mocktail is described as a "refreshingly sweet apple and ginger beer based non-alcohol drink."

Bicardi's “Champions Drink Responsibly” campaign drives home the message that it is possible to act like a Champion when drinking alcoholic beverage by adopting a few behaviors. Appointing a designated driver is one.

The names of "Mix with Rafa" winners were pulled in a drawing. Winners came from around the world, including Austria, Singapore and Venezuela. Of legal drinking age, they correctly answered a few questions about responsible drinking. For their efforts, they won the trip to Mallorca and a chance to mix it up with RN&Co., including UK disc jockey Laura Whitmore.

16 July 2013/NEW YORK – LILY HOAGLAND seemed happy with her choice. Sapphires no less.

Meanwhile, Marife Hernandez gave rubies a close inspection as Ann Nitze (is she holding a sapphire bracelet?) offered moral support.

There are few better ways to spend an afternoon than vetting jewel-of-the-crown type gems, with tea and Champagne as a backdrop. The scene on Tuesday was Siddharth Kaliwal's swanky Upper East Side Gem Palace.

Hosts were the Freer Sackler Galleries of The Smithsonian Institution, along with Tiffany Dubin, Ann Nitze, Susan Pillsbury and Sana Sabbagh.

Marife Hernandez and Ann+Nitze have some decisions to make.

Reception guests could use the occasion to find "something to wear" to the "Some Enchanted Evening Gala" on 17 Oct. The soiree is a fundraiser for the highly anticipated "Yoga: The Art of Transformation," which organizers are calling the world's first exhibit on the "visual culture" of yoga. The traveling exhibit will be installed at the Arthur M. Sackler Gallery from 19 Oct. through 26 Jan 2014.

'R.I.P.D.' Is on the Case, Putting Dead in Their Place



So often, it is amusing to watch a real actor navigating his or her way through a middling action film. In fact, it can be downright ticklish.

Such was the case with Liam Neeson slaying just about everybody in his path in the "Taken" films. What a ride! His presence, though, elevated somewhat essentially banal material. Similarly, the presence of Jeff Bridges in "R.I.P.D.," or Rest In Peace Department, lends it a modicum of seriousness in all of the silliness therein. It arrives in U.S. theaters today.

JB is R.I.P.D. officer/enforcer Roy Pulsipher. The mission of the R.I.P.D. is rid Earth of the dead that won't go peaceable into the afterlife. The creatures have the temerity to be gadabouting amongst the living in very human disguises! The living is none the wiser! This, is not sustainable; it cannot be abided. Think of the complications! Hence the need for the R.I.P.D.

Incidentally, all "R.I.P.D." staffers are dead. Roy and his newly dead new partner Nick Walker (Ryan Reynolds) are tasked with putting the interlopers in their place. Like their quarry, the partners are disguised. Roy is a blonde bombshell and Nick is a middle-aged Asian male. How do all the dead recognize each other? They have their ways. (See trailer above).

In "R.I.P.D," which is based on Peter M. Lenkov's comic book, "Rest in Peace Department," JB brings a lot of Rooster Cogburn swagger. It's as if the actor asked director Robert Schwentke what was his motivation and the director said, "Just do that thing you did in 'True Grit'."

JB sets about chewing up the scenery Rooster-style, and seems to be having a heck of a time doing so. One can just imagine him reasoning, "I know this is preposterous. I know some people are going to wonder what an Oscar-winning actor with a long, successful career is doing here. But hey, it's kinda fun (and the paycheck ain't bad either)!"

Alas, neither Rooster nor Mary-Louise Parker as Roy and Nick's droll commander, Mildred Proctor, can save this wacky puppy. Take heart, though. It's summertime and the livin' is easy.

Long Live 95-Year-Old Nelson Mandela and His Day



IF Christmas Day, as celebrated on 25 Dec. in the Western-influenced parts of the world, is too polarizing a day to do good, surely Nelson Mandela International Day is a day that has the potential to touch those with the most insurmountable of differences.

Today (18 July), is the 95th birthday of Nelson Mandela, the same day that the world celebrates the truncated Mandela Day. It has even more resonance this year because the world's most famous living freedom fighter (aside from Jesus Christ) is ailing. Depending on the source, he's either at death's door or will be imminently released from hospital. Let's all hope that he lives longer and prospers (as God wills it, of course).

The overarching message of Mandela Day is that we should all do something - regardless of how small - to make the world a better place. Here's to hoping, then, that we can take a break from our differences, quarrels and selfishness in the service of something or someone not ourselves.

Celebrations abound around the world. At 7:15 this evening in New York City's Times Square, a video installation titled "The Power of Words" will be playing. Created by established filmmakers, as well as emerging filmmakers from the Tribeca Film Fellows® program, and five Boys and Girls Clubs from across the United States, "The Power of Words" is a multimedia short film that pays homage to the work and legacy of the South African statesman. It's a powerful piece. (See video at top).

Hoping Trayvon Martin Verdict Will Spur You to Action

HEAD’S UP: The furor over the acquittal of George Zimmerman in the shooting death of Trayvon Martin will reach a fever pitch before it tamps down. Already, violence and mayhem have followed what many believe was an obscene miscarriage of justice. Americans are angry; people around the world are horrified. Regardless of the verdict, the loss of such a young, promising life and the irreparable harm to GZ’s life are both a tragedy. As a nation and a world, of course, we will weather this latest upset as we always do. Amid our furor, however, it is reassuring that cool, calm heads are among us. Such a one is Cedric Leake, who in his quiet way, asks us to use the incident as a catalyst for meaningful reflection.

have received a few emails from family, friends, revelers and others regarding the Martin/Zimmerman verdict.

I do feel your pain and would like to suggest that you consider another take on all that has transpired.

Some of you are aware that I received multiple gunshot wounds to the back and to my right arm in Washington, D.C. I was an 11-year-old boy. It actually happened on the south side of Pennsylvania Avenue. The White House is on the north side of the street.

This incident from my youth, unbeknownst to me at the time, has been a bitter/sweet gift from the creator that has kept on giving. I’m prefacing with my own “testimonial,” if you will, to say that the media version of what occurs in these situations is rarely if ever the truth. It wasn’t in my case and I am certain that the Martin case, like myriad others, is no different. Take a “what if” journey with me and riddle me this:

What if?: There are people/entities/energies that actually understand that color, gender, occupation, class, geography, ethnocentricity, religion, etc. do not really matter;

What if?: All that we “perceive” as “reality” and “important” and good or bad is really just an illusion, an illusion that can be programmed or manipulated by whomever has a clear grasp of this knowledge and decides not to use this advantage for good;

What if?: Through control of this knowledge one could completely usurp humankind’s ability to see the oneness and power and majesty of a singular energy source of creation from which all things flow. An energy that is within every single cell of every single ripple that emanates from this “source” of creation.

What if?: Through temperance you could remove the dross from your divine connection to creation and know that who you really are is much bigger and more profound than the labels and bins you allow others, and ultimately yourself, to put you in.

My daily challenge to myself, and now to you if you are in pain because of this verdict, is to make sure to take a moment each day to remember and know your innate, proper and correct connection to the source from whom all creation flows.

The recollection of this knowledge is extremely liberating; it will instantly free you from the pangs of an illusion put in place to assist in your own ultimate demise. To assist in your own repression and imprisonment of the voice of truth that resonates and vibrates within each of us, regardless of color, gender, occupation, class, geography, ethnocentricity, religion, etc.

And while you’re reflecting, please send up a positive shout for the 2.5 young men and boys “of color” between 18- and 25-year-old (and their families) who have been killed everyday in Chicago since 1 January of this year. They were assisted to their demise by gun-toting young men and boys of color.

Oddly enough, this fact seems to have garnered no significant attention of note. From any corner. This is an astronomical rate of death! Daily. (This is higher than the death rate of U.S. soldiers serving in Iraq.) …

All of creation is more similar than different. This is a scientifically/genetically proven fact. So, as painful and f’d up as this Martin/Zimmerman case seems, be vigilant. See things and your relation to them for what they are rather than the grossly distorted version fed to you by some outside entity. Be proactive, not reactive.

If you do the latter, the house will win (as it always does when the odds are overwhelmingly in its favor). History has proved this time and again. I wish stillness and tranquility for you all. It’s the easiest and best way I have found to stay in tune with my inner knowledge, power and connection to the source of all creation.

Be encouraged; truth will prevail.

Cinema for Peace Org Likes What Nicole K. Stands For

12 July 2013/BERLIN – NICOLE Kidman wears numerous hats: mother, movie star, married lady and activist. It is in this latter role that she has been recognized by the Cinema for Peace Foundation (CPF).

The actor received an honorary award from the CPF for her long-term commitment to women’s rights issues, a cause she has undertaken personally and as Goodwill Ambassador for UN Women. (http://www.unwomen.org/). The agency is a United Nations organization that advocates for female empowerment and gender equality.

NK traveled to Cinema for Peace Foundation headquarters in Berlin to pick up this latest trohpy in person. Also honored was Lakshmi Puri, UN Assistant Secretary-General and Acting Head of UN Women.

It was quite the megawatt, woman-power affair at Soho House Berlin. Also in attendance were Fatou Bensouda, Chief Prosecutor of the International Criminal Court, German actress Veronica Ferres, and Bianca Jagger, former partygirl / socialite / wife of Mick and current ambassador of the European Council. Cinema for Peace Foundation was founded in 2008 by writer, concert promoter and producer Jaka Bizilj. Its mission is to promote world peace and understanding by supporting films that focus on peace, human rights and environmental rights / preservation issues. Further, the foundation is tasked with meeting the mandates of both the Cinema for Peace Initiative and Cinema for Peace Gala.

The gala is a cash cow, raising funds that have benefited numerous do-gooder orgs, including J/P Haitian Relief Organization, (http://www.jphro.org/); Elton John AIDS Foundation, (http://www.ejaf.org/); Leonardo DiCaprio Foundation, (http://www.bit.ly/12b86VJ); Amnesty International, (http://www.amnestyusa.org/), and The United Nations Children's Fund UNICEF, (http://www.unicef.org/).

Nasty Boy: Two Faces of Jim Jones Are Exposed



9 July 2013/NEW YORK – JIM Jones is two-faced.

This simple truth became very clear at the release party of his new single, “Nasty Girl.” It went down at Griffin in the Meatpacking District. (See video above).

On VH1’s “Love and Hip Hop,” and Chrissy & Mr Jones,” he presents to the world a laconic, loving guy. A man of a few, lazy words. He adores his mother; crazy about his woman, though he has yet to marry her. This is one of the main hooks of “Chrissy & Mr Jones,” a spinoff of “Love and Hip Hop. It premiered last September and Season 2 will presumably be announced shortly.

That’s one face – call it the TV face. The other face is that of a rapper, currently a solo artist and formerly a member of Dipset, less popularly known as The Diplomats..

Unbeknownst to Yours Truly, who accidentally watched two seasons of “Love and Hip Hop” over Memorial Day weekend and developed an admiration for the man, JJ is the kind of rapper who calls women out of their names and uses plenty of other language, too.

Granted, as a reporter I should have known this. Immediately after watching the last episode of Season 2 of “Love and Hip Hop,” after I observed that it is the best of the “housewife” (city, club, region, sports, occupation) reality shows. Straightaway, I should have started using Google, especially as it regards JJ.

Perhaps, I didn’t want to know. The romantic in me refused to seek out reason. She was so taken by this character who showed up in Miami at the end of Season 2 of “Love and Hip Hop” with a gi-normous engagement ring for his wayward girl, Chrissy Lampkin, that she just presumed that JJ was one of the good guys who didn’t partake in that dreaded form of rap music.

One found out soon enough. Actually, the song’s title - “Nasty Girl” - should have been a clue. In fact, it was a clue. However, someone was in denial, going so far as to convince herself that it was an ironic title that sang the praises of a girl who was so good that she was nasty. Like that’s a baaaaaad hat, meaning a really good hat, a sharp hat.

A colleague at the release party who comments on urban culture asked incredulously, “You haven’t heard Jim Jones’ music? ‘Nasty Girl’ is mild.”

What could a body say? This one said, ‘No,’ explaining why, as is being disclosed here.

Subsequent research has revealed that "Nasty Girl" is on the mild side by JJ standards. Interestingly enough, his biggest hit to date, "We Fly High," keeps the bitches, niggas and motherfuckers to a minimum. It also has a more cogent, potent narrative than much of the rest of his work, especially the newbie.

“Nasty Girl” is a perfectly awful record, as you have probably ascertained if you have been reading the lyrics. If you and you and you had tried to foist this ... material upon the public or iTunes you might have had bodily harm visited upon your person. The single seems slapdash, and maybe it was.

After all, this was part of a taping of the second season of “Chrissy & Mr Jones.” Maybe JJ needed to come up with some quick and dirty material for the show. To that end, he hastily assembled his crew in the studio for a couple of hours to lay down some tracks under such brilliant prose as:

Red Alert: 'The Heart of Samba' Beats in New York



Brasil is hot!

It will host the World Cup next year and the Summer Olympics in 2016. It has one of the fastest growing economies in the world and in financial communities is the B in the so-called BRICS, five countries with emerging economies and increasing clout on the world stage. (The others are Russia, India, China and South Africa.)

Most regular folk, however, associate the country with Brazilian waxes, bikini-clad beauties, and most important, Samba!

Samba comes to NYC in a sort of big way on Sunday when famed Rio de Janeiro percussionist Sergio Krakowski lightens the door of DROM. He will be the main act on a program of Brazilian music, film clips (and, doubtless, dancing in the aisles).

All of the jollification is in support of "The Heart of Samba," NYC-based filmmaker and samba singer Irene Walsh's upcoming documentary. (See video at top).

IW calls samba the soul of the country. In her forthcoming documentary, she turns the lens on the the Rio de Jeneiro neighborhood of Lapa, which is home to some of the most passionate practitioners and preservationists of samba, including headliner SK who is featured in the film. Lapa is also affectionately known by some as the heart of samba.

The film will arrive before the two aforementioned sporting events. Meanwhile, there is still work to be done such as putting a finish on it, which cost$$$, hence the DROM party.

Instructive: 'How to Make Money Selling Drugs'



STUCK in a dead-in job? Wanna make some real money? Sell drugs. Not legal yet no less illicit pharmaceuticals, but illegal drugs like cocaine, meth and marijuana, if marijuana can even be seriously called a drug at this juncture.

This is in part the thesis of "How to Make Money Selling Drugs," the documentary from Matthew Cooke that is playing in select theaters and is available on VOD. But beware, making $8,000 or a cool $1 million a day, has a downside: deadly competition and law enforcement - occasionally one in the same. (See video above.)

Told largely from the point of view of drug dealers, "How to Make Money Selling Drugs," breaks down the business in lay terms. It's essentially a "Drug Dealing for Dummies" manual. Those interviewed are very candid about its interworkings, huge rewards and colossal risks, including the sham publicly and officially known as the "War on Drugs."

Talk about a hustle! And this is not a bunch of bull solely from self-interested drug dealing lawbreakers. Adrian Grenier ("Entourage") allows his role as a co-producer of the film to speak for his stance on the issue.

Those more vocal are sometime hemp planter Woody Harrelson, as well as, Susan Sarandon, Russell Simmons and David Simon, creator of the acclaimed HBO show, "The Wire."

Delverde's Culinary Crusade on Behalf of Pasta

MENTION carbs and the average person in the United States thinks of two things.

One is weight gain. The other is PASTA. What a shame that a delicious and nutritious food source has gained such a bad reputation over the last 15 to 20 years. Hoping to reclaim pasta’s good name are the good folks behind Delverde.

The central-Italy based pasta maker has hit the road in the name of pasta. Its travels have brought it to New York City and Westchester through 24 July where it is conducting “Pasta Sommelier."

Simply put, “Pasta Sommelier”is a one-hour cooking class and tasting. In just 60 minutes, attendees can walk away knowing some important things about good pasta. For one, good pasta has a more durable texture than one of a lesser quality.

Also note that good pasta does not cause the weight gain that myriad diet books have railed against because it does not contain simple carbs. High-quality pasta contains the complex carbs that stick to your ribs, staving off hunger for longer than an hour or two.

You Want What LL Cool J Got? For Starters, Get Enough Sleep.



YOU’RE beside yourself. Those five or 10 extra pounds just won’t come off!

You have checked, double-checked and triple-checked. You’re working out. You’re even lifting weights and you know that muscle is heavier than fat. You’re not even weighing yourself; instead, relying on your skinny jeans to gauge your relative weight loss or gain. You are eating good, whole food, not processed food. You’re not hormonal or otherwise dealing with health complications that can inhibit weight loss.

You’re close to pulling your hair out or scratching somebody’s eyes out. Where is your LL Cool J six pack???!!! What is the problem????!!! Simple. You may not be getting enough sleep.

We’ve learned that sleep deprivation is not good for the heart (http://www.ow.ly/io9Q6). But according to a recent study, sleep deprivation can also lead to weight gain, obesity and the mess of problems that come with that. In other words, that last five, 10 or stubborn 30 is lazing about because YOU, my friend, are not getting enough slumber.

These findings were presented last month at The 
Endocrine Society's 95th Annual Meeting (ENDO 2013, http://www.endo-society.org/endo2013/) in San Francisco. A group of researchers discovered that by monitoring healthy, slim young adults that the study participants had in their blood stream higher levels of a molecule that controls the pleasurable aspects of eating when they got 4.5 hours of sleep a night as opposed to the standard 8.5 hours of sleep ... 'The Unavoidable Disappearance of Tom Durnin': Trying Hard, But Struggling to Rebuild Lost Trust

THERE
are so many ways in which our childhoods can be disrupted and unsettled. In Steven Levenson’s “The Unavoidable Disappearance of Tom Durnin,” a parent goes off to jail after ripping off close family friends.

Tom Durnin (David Morse), the wayward father, may be a legitimately contrite fabulist or simply a seductive con artist.

Whatever the truth, Tom’s son James (Christopher Denham) is leery of his returning parent. James is reluctant to let his mother, Karen Brown-Canedy (Lisa Emery), know that dad is staying with him. (See opening night video at top.)

James possesses some of his father’s skill at fabrication and evasion, which he is applying in a writing class at the local community college. There, he meets Katie Nicholson (Sarah Goldberg) who is nearly as fragile and wounded as he is. Rounding out the cast is Chris Wyatt (Rich Sommer), Tom’s son-in-law and former business associate.

In “The Unavoidable Disappearance of Tom Durnin,” at the Roundabout Theatre Company’s Laura Pels Theatre through 25 Aug, the story is nuanced. The characterizations subtle. Kudos to Beowulf Boritt for a cleverly confined and cramped set design. The only criticism, and it is slight, is that the ending seems somewhat contrived and abrupt, and the title a bit awkward and long.

James (Christopher Denham) is wary of Tom (David Morse) for good reason in “The Unavoidable Disappearance of Tom Durnin.”

DM, with his smirk of entitlement, stands out in a fine ensemble. CD embodies a man so torn by the events in his past that he stumbles through the present. In fact, everyone, under Scott Ellis understated direction, is topnotch.

Bordeaux Wines' Meal Plan for Special Day(s)



SAY what you will about the French, but don't say they don't know their way around food and drink.

Case in point is the good people at Bordeaux Wines (http://www.bordeaux.com/). What are they up to? In a word, commerce. They know what time it is. That is, they are fully aware that tomorrow is Independence Day, or the 4th of July, in the United States.

To celebrate the occasion, they offer five dishes that can be made at home and five wines - rose, white and Bordeaux, bien sur - to complement them. It should go without saying that these are not hotdog and hamburger recipes, but it will not.

SHAVED TUNA CHILI TAPIOCA

Ingredients
7 oz. large pearl tapioca
5 shallots peeled and sliced thin
2 ancho chilies toasted and chopped
9 chipotle peppers toasted & chopped
6 dried thai chilies
4 tbs. Annatto seeds
¼ c. Grape seed oil
1 tsp. Cloves toasted
4 cinnamon sticks toasted and smashed
1 tbs. Sichuan peppercorns crushed
4 tbs. Salt
3 tbs. Sugar
7 c. Water
Chili oil
1 tsp. Salt to finish

For the lime-coconut broth
5 stalks lemongrass
40 kaffir leaves washed & chopped
3 cup coconut juice
¾ cup coconut milk
¾ cup lime juice + 3 oz to finish
¾ cup sugar
1½ tsp. Salt

To serve
Tuna
Tapioca
Asian pear, peeled, cut into ¼” diamonds
Jicama, peeled and cut into ¼” diamonds
Red bell pepper char grilled, peel, cut in ¼” diamonds
Scallion greens cut on bias
Lime infusion

For the tapioca
Sweat all but tapioca, sugar, salt and water in oil until golden. Add water, salt and sugar and bring to boil, simmer for 30 minutes then strain thru a chinois. Bring back to a boil then add tapioca and cook, stirring until clear. Drain under cold running water until cool. Put in a container and just cover with chili oil, then season with salt and reserve.

For the lime-coconut broth
Clean, crush & chop lemongrass fine Combine coconut juice, milk, chili, lime juice, sugar and salt and bring to boil. Add lemongrass and kaffir, mix well and let cool, uncovered. Strain through chinois and finish with lime juice.

To serve
Slice tuna into 1-inch long, ½-inch wide and ⅛-inch thick pieces. Serve 10 pieces per order. Arrange in a chilled shallow medium size bowl and fold each piece in ½. Season tuna with salt then scatter with chili tapioca, then with jicama and pear. Sprinkle with scallions and then scatter with red pepper. Add coconut-lime infusion to cover halfway and serve.

1 green finger chili washed & chopped
3 cup coconut juice
¾ cup lime juice + 3 oz to finish
¾ cup sugar
1½ tsp. Salt

For the lime-coconut broth
Clean, crush & chop lemongrass fine Combine coconut juice, milk, chili, lime juice, sugar and salt and bring to boil. Add lemongrass and kaffir, mix well and let cool, uncovered. Strain through chinois and finish with lime juice.

Pair Tapioca with Saint Glinglin 2012. Characteristics: Simple yet lively with crisp acidity and a classic Sauvignon Blanc nose. The palate is medium-bodied and tropical with notes of lime, jalapeño and grapefruit. Color: White; Tasting Note: Dry, Fresh & Fruity; Price Range: $10-19

GRILLED FISH SARDINES
Adapted from Planet Bordeaux


Ingredients
8 very fresh sardines, scaled and gutted
1 Tablespoon extra virgin olive oil
1 Tablespoon fresh lemon juice
1/4 teaspoon salt
freshly ground black pepper
2 cloves garlic, minced
1 Tablespoon capers, rinsed
2 Tablespoons fresh parsley, finely minced
2 lemons, cut in wedges

Instructions
Wash sardines and pat dry. In a small bowl, mix olive oil, lemon juice, salt, pepper and garlic. Brush mixture onto the sardines and let them marinate while you prepare a hot barbecue fire.

Cook sardines quickly on a hot grill for about 3 to 4 minutes on each side, carefully turning once. Fish should be just cooked through and the skin golden and slightly charred. Transfer to a warm platter.

To serve, mix the capers and parsley and sprinkle over sardines. Garnish with lemon wedges and serve immediately.

Pair Sardines with Château Chaubinet 2011. Characteristics: An aromatic and well-balanced wine with a fruity nose and refreshing floral and citrus notes.

CANLIS SALAD
Taught to him by his Lebanese mother, the Canlis salad was perfected by Peter Canlis and introduced to the world on opening night, 11 Dec. 1950.


Ingredients
1 large head Romaine hearts, cut into 1 inch squares
(Wash individual leaves in warm water, drain and dry in colander and refrigerate. Don’t ever, ever toss a Canlis Salad with warm or wet leaves!!)
Ten cherry tomatoes, halved
½ cup thinly sliced green onion
¾ cup freshly grated Romano cheese
½ cup chopped bacon, cooked
½ cup thinly sliced fresh mint*
1 tablespoon thinly sliced oregano leaves
½ cup croutons**
Salt and freshly ground black pepper to taste
For the dressing
½ cup olive oil
1/3 cup freshly squeezed lemon juice
¼ teaspoon freshly ground black pepper
1 teaspoon salt
1 coddled egg***
Serves 4

Instructions
To make the dressing, put the salt and pepper, lemon juice, oil, and coddled egg in a bowl and whisk vigorously, then reserve. In a salad bowl, add the prepared romaine, green onion, cheese, bacon, croutons, oregano, and mint. Pour dressing over salad and toss thoroughly. Arrange the salad onto chilled plates and finish with cherry tomatoes.

Notes
* Mint: you can’t use too much mint so experiment with the amount
** Croutons: It’s fun to make your own baguettes, butter and minced herbs.
*** Coddled Egg: Pour boiling water into a cup and put a whole egg (in the shell) into the hot water, let sit for one minute, then remove from the water. You may substitute with pasteurized egg mixture (found in the dairy section in cartons).

Pair Salad with Dourthe La Grande Cuvee, 2011. Characteristics: Cool, medium bodied in the traditional Bordeaux style of sauvignon blanc. Herbal, grassy, with hints of lemon zest and citrus. Color: Light yellow; Tasting note: Bright, crisp, and refreshing; Price range: $12-$14.

FEUILLETE OF ASPARAGUS AND FRESH COD

Ingredients
2 bunches asparagus (1 white and 1 green, if possible)
1 egg yolk
1 sheet frozen puff pastry, thawed overnight in refrigerator and cut into 8 rectangles
1 Tablespoon olive oil
3/4 lb. filet of fresh cod
4 large scallops
4 teaspoons fresh lemon juice
2 large green onions
1 clove garlic, minced
1 Tablespoon minced fresh parsley
1/2 cup heavy cream
Salt and pepper

Instructions
400 degrees F. Peel asparagus stalks and steam them until tender. Set aside.
Beat the egg wolk with 1 tablespoon water. Lay the puff pastry rectangles out evenly on a cookie sheet and brush tops with eggwash. Bake them 15-20 minutes, or until puffed, dry inside and golden brown. Remove from oven and let cool.

Heat a heavy skillet over medium heat. Add the olive oil and saute the cod gently, turning once, just until cooked through (fish should be opaque and can be flaked with a fork). Salt and pepper the fish. Remove and separate into large flakes; set aside, keeping warm. Slice the scallops a couple of times across the grain and sauté them quickly in same pan, just a minute or so. Set aside with cod.

Mince the green onions and sauté gently in same pan 1-2 minutes. Add the garlic and parsley, then the lemon juice. Reduce slightly and add the cream. Season to taste.

To fill the feuilletés, separate them in half. Lay bottom halves of pastry on a sheet pan and top with asparagus spears. Top each with seafood mixture, then the sauce. Replace the pastry tops and return to oven for about 5 minutes to heat through. Serve immediately.

Pair Asparagus/Cod with Château Fontenille Bordeaux Clairet 2011. Characteristics: After agitation it quickly reveals aromas of fresh red berries, crushed strawberries and raspberry. The entry is sharp, the palate rich and round, with a lingering fruit. The middle palate is more spicy and the finale fruity.

SLAW WITH ORANGE BALSAMIC VINAIGRETTE

Ingredients
1 cucumber, quartered and sliced
1/2 of a fennel bulb, sliced into long strips
5 radishes, finely sliced cross-wise
1/4 of a white cabbage head, sliced
1/4 of a red cabbage head, sliced
1 carrot, julienned
3 kumquats, finely sliced cross-wise
1 starfruit, sliced cross-wise
2 scallions, minced
2 tbsp sesame seeds, toasted
1 teaspoon of ginger, minced
1/4 cup of cilantro, chopped
A handful of mint leaves
Salt and pepper to taste
For the orange-balsamic vinaigrette
1/4 cup of olive oil
1/4 cup of balsamic vinegar
Juice from 1/2 an orange
1/2 tablespoon of dijon mustard
Salt and pepper, to taste
Serves 6

Instructions
Finely chop the red and white cabbage and the fennel into long, thin strips. Using a julienne peeler, peel long strips of carrot. Peel the cucumber and chop into small quarters. Slice the radishes, scallions, starfruit and kumquats crosswise into thin slices. Mince the ginger into very small pieces.

Make the vinaigrette: using a magic bullet or a fork and a bowl, whisk together the olive oil, balsamic vinegar, orange juice, dijon mustard, salt and pepper.

Toss the salad with the vinaigrette and top with toasted sesame seeds, chopped cilantro and mint.

Pair Slaw with Château Fonfroide 2012. Characteristics: A floral and soft fruit nose with notes of pear, nectarine, peach, orange blossom and citrus on the palate. Color: White; Tasting Note: Dry, Fresh & Fruity; Price Range: $10-$19.
